It is quite simply the favourite concoction in the culinary canvas of sushi: Tekka Maki, a good, two cm-thick rice-roll held together by a leaf of Nori algae, at the core of which a slender strip of tuna fish gleams like a glowing red heart. Minute the piece of fish may be, but it is nevertheless a morsel of tuna and, as such, it bears memories of the gigantic industry that has produced it: from the ocean in which it was spawned and trapped to its processing and marketing – like, for instance, in the sprawling Tsukiji Market in Tokyo where the fish is bartered, in the most exemplary fashion, across the board. No other market in the world deals as much with tuna fish as Tsukiji does.
